E. coli is usually a harmless bacteria, and actually contributes to intestinal health. However, when consumed, it can case mild to severe gastrointestinal illness for those affected. Some forms of E. coli, such as Shiga toxin-producing E. coli (STEC) can be life-threatening.
Side effects typically include severe stomach cramping, diarrhea, fever, nausea, and/or vomiting. The symptoms can present anywhere from a few days, up to nine days after consuming the affected product.
Certain forms of E. coli can lead to kidney failure, known as hemolytic uremic syndroms (HUS), high blood pressure, chronic kidney disease, and neurological problems. Please consult with your doctor if you believe you have food poisoning from eating ground bison/buffalo.
